This Instant Pot Chicken Broccoli Rice dish makes a very filling and comforting meal, perfect for those busy days. By making it in the Instant Pot you don’t have to do much work at all.

Rice is a poular item here, in case you haven’t noticed. It’s affordable and versatile. And in most cases it’s gluten-free, which means it’s something that is safe for my youngest that I can serve to my whole family. While I often make rice as a side, sometimes I prefer to incorporate other things with it that let me turn it into a whole meal. This Chicken Broccoli Rice dish makes a very filling and comforting meal, perfect for those busy days. By making it in the Instant Pot you don’t have to do much work at all. This dish is a big hit here and has been a request a couple of times already.  Here’s how I make it.

Ingredients

  • 1 lb chicken tenderloins
  • 2 cups chicken broth
  • 2 cups white rice
  • 8 oz Velveeta
  • 2 cups frozen chopped broccoli
  • 1 cup milk
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

Set the Instant Pot to saute.

Add about 3 tbsp of oil (I used olive oil) to the Instant Pot. Place the chicken in and brown the chicken.

When the chicken is finished sauteing, add the chicken broth, onion powder, garlic powder and rice to the Instant Pot.

Set the Instant Pot to cook on manual 5 minutes high.

Once the 5 minutes of cooking time is over, do a quick pressure release.

Add the Velveeta, broccoli and milk and stir well.

Set the Instant Pot to cook on manual 4 minutes low pressure.

When the cooking time is up do a quick pressure release.

Serve and enjoy.

Ingredients

I make a casserole similar to this dish. It would be nice to make it in the instant pot when I’m short on time. One pot meals are great for busy weeknights.

So as I started cooking this meal, I had a red flag go off in my head. After the first 5 minutes of pressure cooking, the cooked rice hinders the second round of pressure cooking. I get a burn notice for the 4 min, low pressure stage and it won’t come up to pressure. Next time I’ll do 5 mins the first round with broccoli et al. followed by 5 minutes with uncooked rice to finish off the chicken and rice. Thoughts?

Not sure why that would happen. I’ve made 3 times this way with no problem and no burn message either. The 4 minute low pressure stage is to cook the broccoli and warm the dish enough to make the milk and cheese melty. next time I make it I can try the 4 minute stage on steam, which I think should wok as well.

Instant rice such as Minute rice is very convenient and versatile. Downside it that it cooks so quickly it doesn’t work well in a recipe with other ingredients.

I’m not sure if anyone else noticed but your recipe ingredients at the top says two cups of rice and the one at the bottom says one cup of rice. I only read the one at the top as I was putting my ingredients in my instant pot so I ended up having to double my liquid. I hope doubling the liquid was right and this comes out ok.
