Instant Pot Chicken Bacon Ranch Rice combines three favorite flavors to make a filling comfort food. This gluten-free recipe is easy to make and leftovers reheat well.
I have another gluten-free rice dish for you. This one may not be the prettiest, but it is pretty tasty. It mixes together one of my favorite combinations – chicken, bacon and ranch. The dish reheats really well, which is a good part of its appeal for me since my youngest loves it and can bring it to school for lunch. The dish is very filling, as well as very easy to put together. Here’s how I make it.

- Instant Pot (I used the 6 qt model.)

Instant Pot DUO60 6qt 7-in-1 Multi-Use Programmable Pressure Cooker
Ingredients
- 1 lb chicken tenderloins, cut into bite sized pieces
- 2 cups chicken broth
- 2 cups white rice
- 1 cup shredded bacon
- 8 oz Velveeta
- 1.5 cups ranch dressing (Hidden Valley is gluten-free)
- 1 tsp onion powder
- 1 tsp garlic powder
- olive oil
Instructions
Set the Instant Pot to saute.
Add about 3 tbsp of olive oil to the Instant Pot. Place the chicken in and brown the chicken.
When the chicken is finished sauteing, add the chicken broth, onion powder, garlic powder and rice to the Instant Pot.
Set the Instant Pot to cook on manual 4 minutes high pressure.
Once the InstantPot has finished the cooking cycle, do a quick pressure release.
Set the Instant Pot to saute.
Add the Velveeta, bacon and the ranch dressing and heat until all of the cheese has melted, stirring well constantly.
Serve and enjoy.

I remember when my youngest was first diagnosed, the change can be rather intimidating. Once you learn where gluten hides it continually gets simpler to cook gluten-free.
