I have another gluten-free Instant Pot rice dish for you! My youngest has an extended school year and this year there is no school lunch during the summer. So, I’ve been making some different gluten-free meals whose leftovers will store and reheat well. My son loves rice. He also enjoys ham. I decided to make a rice dish that has (in my mind) a sort of Hawaiian feel to it. Preparing this Ham And Pineapple Rice is almost effortless. The Instant Pot does the cooking for you, which results in a tasty rice dish that’s both sweet and a little salty. And those leftovers I mentioned? You’ll be glad to know that the dish reheats nicely in the microwave.  Here’s how I make Gluten-free Instant Pot Ham And Pineapple Rice.

Equipment Needed

  • Instant Pot (I used a 6-qt)
  • measuring cups
  • measuring spoons
  • silicone cooking spoon
  • cutting board
  • knife

Ingredients

  • 12-16 oz cooked honey ham, diced (you could use a ham steak or leftover ham)
  • 1.5 cups uncooked rice (check the label if you’re making gluten-free)
  • 2 cups of chicken broth (check the label if you’re making gluten-free)
  • 1 cup of frozen peas and carrots
  • 1 can (16-20 oz depending on the brand) pineapple (You can chunks or slices you cut into chunks. Do not use crushed pineapple.)
  • 2 tsp onion powder
  • 2 tsp of garlic powder
  • 1/3 cup of teriyaki sauce (check the label if you’re making gluten-free)

Instructions

Pour the chicken broth into the Instant Pot.

Add the rice, teriyaki sauce, garlic powder, onion powder, and vegetables and stir well.

Add the ham and stir.

Add the pineapple and stir gently.

Set the Instant Pot to cook on manual low pressure for 9 minutes.

Once the Instant Pot has finished cooking do a manual pressure release.

Remove the lid and stir.

Serve and enjoy.

    You don't list pineapple as an ingredient nor say when to put the ham in! I'm going to use a can of chunk pineapple and cook the ham along with all. I have frozen peppers and onion all ready instead of powders.

    It's for an open house gathering.. uses my leftovers and the hostess' son lives in hawaii..I'm bringing my ukulele.

    The hame goes in with the rice. Since ham is cooked you could technically add it later but then it's cold and the rice doesn't get any of the salty flavor from the ham juice. I have used both chunked pineapple and rings that I cut into chunks. Crushed doesn't work as well because it really falls apart.

    I do not have an instant pot. One of my friend does have and she loves cooking. I am going to share this ham and pineapple rice recipe with her. She is definitely going to love it. :)
