Mexican Corn Salad
If you’re planning a summer meal, bbq or party and need a simple side that will go with almost anything, Mexican Corn Salad is your new go-to! This easy recipe requires no cooking at all and takes only minutes to prepare. Here’s how to make it.
This recipe yields 5-6 servings. It takes about 5 minutes to make.
Equipment Needed
- large glass mixing bowl
- measuring cups
- measuring spoons
Ingredients
- 3 cups canned fire roasted corn
- 1 tbsp lime juice
- 1 tbsp lime zest
- 2 tbsp olive oil
- 2 jalapenos, diced seeds removed
- 1 cup cherry tomatoes, halved
- 1 tsp chili powder
- 1 tsp tajin seasoning
- ½ tsp cayenne
- ¼ cup Queso Fresco cheese (You can also use cotija cheese if you prefer or can’t easily get Queso Fresco.)
Instructions
Place all of the ingredients except the queso fresco into a large mixing bowl.
Toss gently to combine the ingredients in the bowl.
Add the queso fresco to the bowl and gently toss to combine again.
Serve and enjoy!
