Ingredients

  • 3 cups of canned fire roasted corn 
  • 1 green bell pepper, diced  
  • 1 orange bell pepper, diced  
  • 1 red onion, diced 
  • 1 cup baby tomatoes, sliced 
  • 3 tbsp olive oil 
  • 2 tsp cajun spice 
  • ½ tsp cayenne pepper
  • ½ tsp paprika 
  • 1 tsp minced garlic 
  • 2 tsp thyme 
  • 2 tsp oregano  
  • 3 tbsp minced fresh parsley

Instructions

Rinse off the peppers and peel the onion.

Mince the peppers and the onion and set aside.

Slice the tomatoes and set aside. 

Place the drained corn into a large bowl. 

Add the peppers, onions, and tomatoes to the large bowl and toss to combine.  

To make the dressing, place the olive oil, minced garlic, and all spices into a small bowl and whisk to combine. 

Pour the dressing over the corn mixture and toss to combine. 

Add the minced fresh parsley and lightly toss. 

Chill for 2 hours before serving. 

Serve and enjoy!
