Who doesn’t love a good salad? Today I’m sharing a salad that features flavors of summer. You can either serve it as a side dish or pack it up in individual containers for work, outings, school and the like.

Blueberry Corn Feta Salad combines fresh blueberries, sweet corn, fresh basil and salty feta to make a delicious summer salad. This light and colorful summer salad is perfect for a weeknight dinner, entertaining, cookouts, picnics and tailgating.

Ingredients

  • 2 cans of sweet corn (drained)
  • 1 pint fresh blueberries, washed and drained (1 ½ cups)
  • ⅓ cup sliced green onions
  • 1 fresh jalapeno (seeded and minced)
  • ½ cup feta cheese (crumbled)
  • 2 ½  tbsp fresh basil (chopped)
  • 3 tbsp lime juice (fresh)
  • 1 ½ tbsp olive oil
  • 1 tbsp pure honey
  • ⅓ tsp chili powder
  • salt (to taste)
  • black pepper (to taste)

Instructions

Prepare the ingredients.

Place the drained corn, blueberries, sliced green onions, minced jalapeno, feta, and fresh basil in a large bowl.

Toss to combine and mix the ingredients.

Place the lime juice, olive oil, honey, chili powder and salt and pepper (to taste) in a small bowl and whisk together.

Drizzle the dressing on top of the salad ingredients.

Stir to combine the salad and place the cover onto the bowl.

Place the salad in the fridge until ready to serve.

Before serving, toss once more.

Serve and enjoy!
