Mac And Cheese. It’s a favorite dish in many houses. The fact that it’s easy to make is a happy thing. The fact that it’s really versatile and can be made in so many different ways is a great thing. While I love both red and white sauces, hubby clearly prefers the whites. The other night I needed to make something quick. Because I knew he was especially hungry, I opted to skip a red sauce and go with something white. Searching in the fridge and cabinets I  decided to use some ricotta cheese that had to be used, alomg with some sour cream and shredded Italian cheese. Nothing red there. Of course I used an electric pressure cooker, because why I just love cooking with them. Voila Instant Pot Italian Mac And Cheese. This Italian Mac And Cheese has some texture because of the ricotta. I didn’t want the dish to completely dry out, so I added a little sour cream. The dish gets its flavor as much from the spices you use as it does from the cheeses, so feel free to add more spices according to your taste. Here’s how I make Instant Pot Italian Mac And Cheese.

Instant Pot Italian Mac And Cheese

Equipment Needed

  • electric pressure cooker (I used a 6 qt Instant Pot)
  • silicone cooking spoon
  • measuring cups
  • measuring spoons

  • 1 lb pasta
  • 4 cups of water
  • 1 cup sour cream
  • 4 oz Italian blend shredded cheese
  • 12 oz ricotta cheese
  • Italian seasoning
  • onion powder
  • garlic powder

Instant Pot Pressure Cooker Italian Mac And Cheese Recipe From Val's Kitchen

Instructions

Spray the pot with nonstick cooking spray.

Place the pasta and water into the pressure cooker, trying to make sure to cover as much of the pasta with the water as possible.

Turn the seal on the pressure cooker to closed.

Set pressure cooker to cook on manual 6 minutes.

Once pressure cooker is finished cooking, allow to release pressure naturally for 5 minutes before doing a quick pressure release.

Add in the ricotta and sour cream and stir well until everything is blended.

Add in the spices and shredded cheese and stir until well blended.

Serve with salt and pepper to taste.

Instant Pot Pressure Cooker Italian Mac And Cheese Recipe From Val's Kitchen

Ingredients

  • 1 lb pasta
  • 12 oz ricotta cheese
  • 4 oz Italian blend shredded cheese
  • 4 cups water
  • 1 cup sour cream
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning

Instructions

  1. Place the pasta and water into the pressure cooker and seal.
  2. Set pressure cooker to cook on manual 6 minutes.

I don’t have an instant pot (I wished I did), but this mac n cheese looks divine! I am the only one in my house that loves mac n cheese (what’s wrong with these people!) but I will definitely try this on the stove top or maybe my crock pot.

Mac and cheese is always a big hit in our household. I like the use of ricotta in this dish, and the Italian cheese versus our regular cheddar. I love how easy it is to cook with the instant pot!

Mac and cheese looks delicious and is always popular with all age groups. Using different mac shells is always fun. Don’t own instant pot will just have to take 10 minutes do it on the stove top.
