Freshly baked muffins – I just love them. There’s something about a nice fresh, soft, moist and slightly warm muffin that just makes me happy. But since baking from scratch is not exactly my strong suit, I usually buy a premade muffin if I’m really in the mood for a muffin. That can be expensive, so I don’t do it often. Really wanting a muffin the other day, I decided to turn to an old trick you may know – making muffins from cake mix. That’s right. You can make muffins from cake mix. Cake mix muffins are quick and easy to make and have that soft, fresh texture we all love. Berry Muffins From Cake Mix make a great treat for any time of the day. Here’s how I make them.

Berry Muffins From Cake Mix

This recipe as written makes 8 jumbo muffins.

  • large mixing bowl
  • measuring cups

Ingredients

  • 1x 16.25 oz box white cake mix
  • 1 cup frozen mixed berries
  • 3 eggs
  • 2/3 cup milk
  • 1/2 stick melted butter
  • 1-2 tbsp butter
  • colored sugar for decorating

Instructions

Preheat the oven to 350 degrees f.

Prepare the muffin pans with nonstick cooking spray, or if you prefer, put liners into the muffin cavities.

Place the cake mix, eggs, milk and butter into the mixing bowl and combine thoroughly.

Gently fold in the frozen berries.

Pour the mixture into the muffin cavities, dividing equally.

Bake for 20-25 minutes, until the muffins are turning golden brown.

Let cool for at least 5-10 minutes before serving, depending on how warm you like them.

While the muffins are cooling, melt 1-2 tbsp of butter in the microwave

Brush that butter on top of the muffins, then sprinkle some of the colored sugar on the top.

Serve and enjoy!

I love the idea of muffins out of cake mix. You can get a lot more muffins out of the mix anyway and like you did, add your muffiny stuff to it.

If there is a favorite of the muffins, it would have to be a good home baked blueberry. I can’t get enough of eating it while its warm. I’ve never tried it with a cake mix, but I just may now.
