We are huge mac and cheese fans around here. My oldest could probably eat it every day and not complain. While I do love it, I sometimes want a break from the stronger cheddar flavor that most people think of when they think of mac and cheese. Mozzarella is one of my favorite cheeses, if not my most favorite. It’s just so smooth, soft and tasty. Used in mac and cheese it provides a very different flavor, one that is quite mellow. Bacon is perfect for adding a little something to the mild mozzarella flavor. The resulting mac and cheese has thick, smooth and creamy mozzarella with a hint of smokiness from the bacon. Making this dish in the Instant Pot is great because it becomes a one pot dish that requires very little effort. Here’s how I make Instant Pot Bacon Mozzarella Mac And Cheese.
Instant Pot Bacon Mozzarella Mac And Cheese
- electric pressure cooker (I used a 6 qt Instant Pot)
- measuring cups
- silicone cooking spoon
- 16 oz pasta
- 4 cups water
- 8 oz shredded mozzarella cheese
- 4 tbsp cream cheese
- 3 tbsp butter
- 1/3 cup bacon
- 2 tsp Italian seasoning
Place the 4 cups of water into the Instant Pot.
Add the pasta. Try to cover as much of the pasta as possible with water.
Place the lid on the instant Pot and set to cook on manual high pressure for 5 minutes.
Once the cooking cycle has finished, do a quick pressure release.
Stir the pasta.
Add the shredded mozzarella, cream cheese and butter and stir thoroughly until both have melted and the pasta is in a smooth sauce.
Add the bacon and Italian seasoning and stir well.
