Chicken cacciatore is a classic Italian dish. This Slow Cooker Chicken Cacciatore recipe shares how to make the popular Italian hunter style chicken dish in a slow cooker. This dish is classic Italian comfort food made effortless.

Ask me to look at most restaurant menus and I am sure to start hunting for the Italian dishes. Many of my favorite dishes are Italian. There are just so many tasty, hearty, filling dishes to choose from! Cacciatore means hunter in Italian. One dish that I know a lot of people love is an authentic chicken cacciatore, which is a dish I have never attempted making myself. Cacciatore most frequently refers to chicken that is prepared “hunter-style” with onions, herbs, usually tomatoes, often bell peppers, and sometimes wine.

My friend Laura, who is Italian, makes a mean chicken cacciatore. (Say hi to Laura everyone!) I’ve been hearing about her food for years, even before we met. My oldest son and her son have been friends since grade school and he always gave his mom’s food the highest praise. Laura’s favorite way to make chicken cacciatore is in a crock-pot or slow cooker. She was kind enough to share her recipe for Slow Cooker Chicken Cacciatore with me. I’m personally hoping she’ll consider sharing more of her recipes here, because she cooks a lot of different dishes than I do and I know you’d love them. Plus it would give the two of us more opportunity to hang out. 😉 For now, here’s how she makes Slow Cooker Chicken Cacciatore.

Equipment Needed

  • slow cooker (a Hamilton Beach Set ‘n Forget 6 qt oval programmable slow cooker was used)
  • small mixing bowl
  • measuring cups
  • measuring spoons

Ingredients

  • 2.5 – 3 lbs chicken thighs
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 12 oz sliced mushrooms
  • 2x 14 oz cans diced tomatoes
  • 2x 6 oz cans tomato paste
  • 1/2 cup red wine
  • 1/2 cup chicken broth
  • 1 tspsalt
  • 1 tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 cup water

Instructions

Place the chicken onto the bottom of the crockpot.

Add in the onions, peppers, mushrooms and diced tomatoes.

Place the tomato paste, wine, broth, salt, pepper, oregano and basil into the mixing bowl and combine well.

Pour the mixture in the bowl over the ingredients in the crock.

Add the water.

Close the lid and set to cook on low for 7 hours.

Serve over the pasta of your choice.
