
Cadbury Egg Cookies
When you see Cadbury Mini Eggs in the store you know Easter is coming. These treats feature a candy shell surrounding a creamy Cadbury milk chocolate egg. This recipe takes those candy coated pieces of chocolate and surrounds them with a rich and chewy homemade chocolate cookie. Here’s how to make Cadbury Egg Cookies.
Equipment Needed
- 2 cookie sheets
- parchment paper
- large glass mixing bowl
- medium glass mixing bowl
- whisk
- small ice cream scoop
- measuring cups
- measuring spoons
- small pot
- 1 disposable piping bag
- cooling rack
Ingredients
- 1 cup unsalted sweet cream butter, softened
- 1 cup sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 1 tbsp instant espresso powder
- 2 cups flour
- ½ cup Hershey’s dark chocolate powder
- 1 ½ tsp kosher salt
- 2 cups crushed Cadbury Mini Eggs
- 24 Cadbury Mini Eggs
Chocolate Ganche Ingredients
- 1 cup semi sweet chocolate chips
- ½ cup heavy whipping cream

Instructions
Cookie Instructions
Preheat the oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
Place the butter and sugar into a large bowl and beat together until light and fluffy.
Beat in the egg, vanilla and coffee powder until combined.
Place the flour, cocoa powder, and kosher salt into a medium bowl and whisk together.
Gradually beat in the dry ingredients until combined.
Use a small ice cream scoop to scoop out some of the cookie dough into your hand and roll that dough into a ball.
Roll the cookie dough into the crushed Cadbury Mini Eggs.
Place the cookie dough balls onto the cookie sheet.
Use your thumb to make an indentation in the center of the dough.
Place the cookie sheets into the oven and bake for 8 minutes.
Once the cookies have baked, remove them from the oven and place them onto a cooling rack and allow them to cool completely.
Chocolate Ganache Instructions
Place the heavy whipping cream into a small pot and bring to a simmer.
Place the chocolate chips into a heat proof bowl.
Pour the heavy whipping cream over the chocolate chips.
Allow to sit for a minute before whisking until smooth.
Allow the ganache to sit to cool for 5 minutes.
Spoon the ganache into a disposable piping bag.
Fill in the center of the cookie with the ganache and place a whole cadbury egg into the center.
