Sweet and Sour Chicken Lo Mein is very easy to make and is cheaper than takeout!

Ingredients
- 1 ½ lbs chicken breasts cut into 1-inch chunks
- ½ cup cornstarch
- ¼ cup flour
- canola oil for frying
- 1 cup pineapple chunks
- 1 red bell pepper cut into 1-inch chunks
- 1 cup snow peas
- 1 cup broccoli
- ½ onion cut into 1-inch chunks
- ½ cup sugar
- ¼ cup brown sugar
- ½ cup apple cider
- ¼ ketchup
- 4 tsp soy sauce
- 1 tbsp minced garlic
- 1 lb spaghetti

Instructions
Place the sugar, brown sugar, apple cider, ketchup, soy sauce, and minced garlic into a small bowl and mix to combine.
Prep the chicken, then pat it dry and place in a baking pan.
Add cornstarch to the baking pan and toss the chicken chunks until evenly coated.
Add the canola oil to the frying pan.
Heat the oil on medium to high heat.
Cook the chicken for 3-4 minutes, until cooked through.
Remove the chicken from the frying pan and set aside.
Add the peppers, onion, broccoli to the frying pan and cook for 5-7 minutes, until crisp-tender.
Add the chicken back to the pan and pour the sauce on top.
Toss to combine.
Cook the noodles according to the instructions on the package.
Drain the noodles, then rinse and toss with 1 TBSP oil to prevent sticking.
Set the noodles aside.
Add the noodles to the chicken.
Toss everything together over high heat until well combined.
Serve immediately.
