Ingredients
- 1.5 lbs ground beef
- 1.5 cups white rice
- 16 oz frozen mixed vegetables
- 2x 14.5 oz cans diced tomatoes seasoned with basil, garlic and oregano
- 1x 14.5 oz can water
- 1 tbsp Italian seasoning
- 4 oz shredded mozzarella cheese (a mozzarella – cheddar mix also works but has a less Itlian feel, I rn out of mozz the second time I made this.)
Instructions
Set the Ninja to stovetop high.
Place the ground beef into the pot and then brown it.
Once the meat has finished browning,switch the Ninja to dry oven 350 f.
Place the following items into the pot, in this order – rice, mixed vegetables, diced tomatoes and water.
Place the lid onto the Instant Pot and let cook for 20 minutes.
After 20 minutes has passed, remove the lid and give a good stir.
Replace the lid and cook for another 10-15 minutes, until most liquid has absorbed.
Turn the Ninja off.
Remove the lid and give a stir to fluff the rice.
Sprinkle the shredded cheese across the top.
Replace the lid and let the cheese melt.
Serve immediately.

Made this tonight for my family, everyone loved it! Even my picky 7 year old, I don’t have any fancy kitchen gear, so I made it it a pot on the stove and put it in a casarole dish and baked it with cheese, sooooooooo good
