Hubby loves cabbage. I wanted to make him a variation of stuffed cabbage as an unstuffe dish. It was super easy to make and he loved it. I made it using the Ninja 3-in-1 Cooking system, which gave me a reasonably quick cooking time and only one pot to clean. All of the ingredients I used were gluten-free by nature, resulting in a gluten-free dish for everyone to enjoy. Here’s how I made it.
Gluten-free Unstuffed Cabbage Roll Casserole
Ingredients
- 1.25 lbs ground beef
- 1 small onion
- 1 small head of cabbage
- 28 oz can diced tomatoes
- 15 oz can tomato sauce
- 1 1/4 cups rice (I used jasmine rice)
- 4 oz shredded mozzarella cheese
- salt and pepper to taste

Instructions
Chop the onion.
Set Ninja to stovetop high.
Place the ground beef and the onion into the Ninja and brown.
While that’s cooking, chop the cabbage.
When ground beef is no longer pink, add in the cabbage, diced tomatoes, tomato sauce and rice.
Stir well.
Bring mixture to a boil.
Lower Ninja to stovetop medium and let mixture cook for about 20 minutes.
Sprinkle the cheese on top.
Put the cover back on, lower Ninja to stovetop low and let cook for 5-10 minutes.
Turn the Ninja off.
Let dish sit in Ninja for about 10 minutes to solidify a bit.
Serve with salt and pepper to taste.

I ended up pressure cooking for 19 min at 390* NR for 5 mins and the QR. It was good but could have cooked a little longer
