Stuffed Pepper Stew
My mother-in-law was a really good cook. Of all of the things that she cooked, her stuffed peppers were one of my husband’s favorite. I was thinking about making stuffed peppers for him the other day and decided to change it up a bit and deconstruct them. The resulting dish is very filling. You can change up the flavor to suit your own taste just by adding a bit of hot sauce or changing to use a hotter pepper. The dish is super easy to make, and calls for only one pot (the Ninja). Here’s how I make it.

- Ninja 3-in-1 Cooking System or Ninja 4-in-1 Cooking System
- silicone cooking spoon
- measuring cup
- cutting board
- 1.5 lbs ground beef
- 1.5 cups Minute Rice
- 1x 28 oz can diced tomatoes
- 1x 28 oz can crushed tomatoes
- 2 green peppers
- 1 small onion
- 2 tsp garlic powder
Set the Ninja Cooking System to stovetop high.
Brown the ground beef, stirring occasionally.
Add the peppers and onions to the Ninja and cook until onions are turning translucent.
Add all of the tomatoes to the Cooking System.
Cook for 15 minutes.
Add the Minute Rice.
Cover and let sit for 10 minutes.
Serve and enjoy!
