  • 1 medium red bell pepper (about 1 cup), diced
  • 1 cup onion finely chopped
  • 2 cups fresh baby spinach
  • 1 tsp minced garlic
  • 1/2 tsp spanish paprika
  • 1/2 tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • fresh baby spinach as garnish
  • whole grain english muffins

Preheat the oven to 350 degrees F.

Grease a 9×13” baking dish and set aside.

Place the eggs into a medium sized mixing bowl and whisk together.

Add the sea salt and pepper to the bowl and whisk to combine.

Pour the egg mixture into the prepared baking dish.

Add the peppers to the dish and lightly swirl through with a knife to combine.
