Mashed potatoes. I love them. I serve them at most large dinners. As much as I enjoy eating them, for a long time I didn’t really enjoy making them. They just seemed to take ages to make. And then the mixing was just work. Once I learned I could make mashed potatoes in an electric pressure cooker, I never looked back. Instant Pot Mashed Potatoes are the easiest mashed potatoes you could ever make from scratch. Once the potatoes have cooked, they are so soft and tender that you can mash them by hand with ease! And they’re ready in under 30 minutes! This is the easiest way to make real homemade mashed potatoes there is. Here’s how I make Instant Pot Mashed Potatoes.

- electric pressure cooker (I used a 6 Qt Instant Pot)
- potato peeler
- cutting board
- cooking spoon
- silicone potato masher
- measuring cup

Ingredients
- 5 lbs potatoes, peeled and cut into chunks
- 2 cup chicken broth (you can use water if you prefer but the chicken broth really gives the potatoes a nice flavor.)
- 1 cup milk
- 1 stick butter
- 8 oz cream cheese, softened

Instructions
Peel the potatoes and cut them up into chunks. The chunks should be bite-sized, as this makes it easier to mash in the pot.
Pour the chicken broth over the potatoes.
Set to cook on manual 9 minutes.
While the potatoes are cooking, soften the cream cheese in the microwave on medium power for 1-2 minutes.
Once the cooking cycle has finished do a quick pressure release.
Add the milk to the pot.
Mash with a silicone masher.
Add the butter and cream cheese and then stir to combine thoroughly.
Serve immediately.

I've never thought to make mashed potatoes in an Instant Pot. There's so much you can do with them, it always amazes me.

We regularly make mashed potatoes in our house as everyone loves it. But we use the pressure cooker. Have not done it with an instant pot, will give it a try.

That is pretty cool you can make these in the instant pot. I have never used cream cheese in mashed potatoes but it sounds like a good combination.
