The conventional way to make Pork Carnitas is to simmer the pork for hours. Shorten that time and let the Instant Pot electric pressure cooker make this versatile dish in no time at all. Here’s how to make Instant Pot Pork Carnitas.

Equipment Needed


Ingredients

  • 3 lb boneless pork butt roast
  • 1 cup Coke
  • 1/2 cup brown sugar
  • 1 1/2 cups red enchilada sauce
  • 4 oz diced green chilies
  • 1 cup water

Seasoning Mixture

  • 1 Tbsp chili powder
  • 1/2 Tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp cornstarch optional
  • 1 Tbsp water optional

Instant Pot Pork Carnitas Recipe

Instructions

Place all of the seasonings into a small bowl.

Cut the pork into 1-2 inch size pieces.

Place the meat into the pot.

Add 1 cup of water to the pot.

Pour the seasonings all over the pork.

Set the pressure cooker to cook on manual high pressure for 30 minutes.

Do a 30 minute natural pressure release.

Remove the lid and drain any excess liquid.

Place the pork back into the pot.

Mix the Coke, brown sugar, enchilada sauce and green chilies in a small bowl.

Pour the sauce all over the pork.

Set the Instant Pot to saute and stir until sauce thickens.

Use two forks to shred your pork into small pieces.

Serve and enjoy!

    This seems a quick instant pot recipe. Being vegetarians, it is something we would not be able to use, unfortunately. But I liked the seasoning and we could try this out with substituted vegetarian ingredients.

    Alright, I can see that I need an Instant Pot and will look into buying one. This recipe looks and sounds divine. I bet I could even get the kids to eat the fresh veggies in it too. I had no idea of all of the dishes I could create with an Instant Pot until I started doing some research on them.
