Citrus Orange Roughy Foil Packets are foil packet meals that can be cooked on an outdoor grill as well as indoors. The flavor of citrus and salsa blend with the mild orange roughy, making for a flavorful dish. Cooking with foil packets makes for easy cleanup.

Citrus Orange Roughy Foil Packets

If you haven’t tried foil packet cooking, you are going to love it! Preparation only takes a few minutes and there’s virtually no clean up. You can use this method indoors year round, or cook the packets on your grill during the warmer months.

You can use fresh or preserved lemons to make this recipe. Preserved lemons generally add a lot more flavor. You can either buy a container of preserved lemons or easily make your own with a Himalayan salt block. A word of caution, however, if you use preserved lemons, you won’t want to add additional salt to the filets without tasting.

This recipe uses orange roughy filets, but this technique can be used with any type of fish, lean protein and veggie combination.

Ingredients

4 orange roughy filets
12 slices fresh or salt-cured preserved lemons
8 slices fresh lime
2 tbsp fresh cilantro, stems removed and chopped
1 tbsp fresh jalapeno pepper, seeds and veins removed and finely chopped
4 tbsp unsalted butter
salt and pepper, to taste

Instructions

If preparing this recipe indoors, preheat the oven to 400 degrees.

Tear 4 sheets of aluminum foil into sections large enough to fold over filets, with another couple of inches on each side for closing the pouches.

Place 1 filet slightly off center on each sheet and add 3 lemon slices and 2 lime slices on top of each.

Top each filet with ¼ of the cilantro and jalapeno pepper. Top with 1 tbsp of butter and sprinkle with salt and pepper, to taste.

To seal the packet, fold the aluminum foil in half over the ingredients. Fold the 3 open sides, one at a time, over several times to seal the packet completely. The goal is to seal the packet tight enough to hold in the steam, but also to allow enough room for the air to expand.

Place the foil packets into the preheated oven for 15 minutes. If cooking on the grill, place the foil packets onto a hot grill over medium, direct heat and cook for approximately 8 – 10 minutes. Add a couple minutes to your cooking time if starting with frozen filets.

To serve, open the foil packets, carefully avoiding the hot steam. Discard the lemon and lime slices.

Transfer the filets to plates, then top with a spicy peach salsa and serve.

    I've never been a big fan of steamed or baked fish. But the finished product in this post looks wonderful - especially with the citrus topping.

    I'm not really sure when I turned into my mother, but I hate messes. Foil packets are awesome for quick clean-up. This roughy recipe sounds like a delightful option for foil packet dinners with a whole lot of flavor.
