Grilled Gluten-free Bacon Meatloaf recipe

What do you do when someone wants meatloaf but you don’t want to turn on the oven and heat up the house? Cook it on the BBQ grill! I wasn’t 100% sure of how it would turn out but figured it was worth a try. As luck would have it it’s easy to make and it tastes good too! I made this one gluten-free so my youngest could have some. I added in a little bacon as well, which gave the flavor a little extra something. Here’s how I made it.

Grilled Gluten-free Bacon Meatloaf

INGREDIENTS

  • 2 lb ground beef
  • 1 cup mashed potato flakes (I used Potato Buds which are gluten-free)
  • 1/2 cup crumbled bacon or bacon pieces
  • 1/2 – 3/4 cup BBQ sauce (split into 1/4 and 1/4-1/2)
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 egg

INSTRUCTIONS

Turn grill on high to heat up.

Place ground beef, potato flakes, 1/4-1/2 cup Potato Buds, bacon, egg, onion powder and garlic powder in a large bowl. (So all you should have left is 1/4 cup BBQ sauce.) Mix it well.

Form two loaves. Place each loaf in the center of a piece of foil, then fold the sides to form little walls.

Use the remaining BBQ sauce to coat the top of the meatloaf.

Cook for 55 minutes on indirect heat.

Note of interest. I cooked one loaf on indirect heat and one on direct heat. The one cooked on direct heat was charred on the bottom and a bit more well done on the top. If you really wanted to cook this on direct heat you could, you’d have to adjust the heat level and/or cooking time though.
