valmg’s Creamy Broccoli Stuffed Chicken Breast Roll-up Recipe
- 1-1.5 lbs thinly sliced boneless chicken breast
- 6 oz cream cheese (softened)
- 1 small bag steamable frozen broccoli
- 1 large can (or 2 small 10 oz cans) cream of chicken soup
Preheat oven to 350 degrees.
Cover bottom of baking pan with cream of chicken soup. Save remainder of soup.
Steam broccoli for half of the time specified in directions.
Chop broccoli into small pieces.
Mix broccoli well with cream cheese.
Spoon broccoli and cream cheese mixture onto top of chicken breast.
Roll chicken breast up and hold closed with toothpick.
Place chicken roll-up into baking pan.
Cover chicken roll-ups with remainder of cream of chicken soup.
Bake in oven for 30 minutes.
Remove from oven and serve with a side of noodles or rice, as there’s plenty of sauce to put over them in the pan.
