I didn’t have everything I needed to make muffins from scratch so I used a boxed muffin mix. You can use any chocolate muffin recipe that you may already have or use a box, it’s up to you. I used Betty Crocker Double Chocolate Muffin Mix because I had it in the cabinet.
INGREDIENTS
- 1 box muffin mix (or the ingredients you use to make muffins)
- 1x 8 oz cream cheese (softened)
- 1x egg
- 1/3 cup sugar
- 1 tbsp lemon juice
DIRECTIONS
Mix the muffin mix according to the directions on the box or according to your recipe.
In a bowl mix the cream cheese, the egg, the sugar and the lemon juice.
Using either a greased muffin tin or tin liners, fill each opening about halfway with the muffin mix.

Spoon the cream cheese mixture on top of the muffin mixture in the pan. The opening should now be 3/4 to all of the way full.

Bake the muffins according to package directions (in my case this was for 20 minutes on 425).

Let cool for about five minutes if serving right away.

These look scrumptious! I like that they are so easy to make by starting off with a muffin mix. There are times we all need to take a short cut.

Wow! I have to be careful not to drool all over my keyboard. It is late, and I would really love to have one of these muffins right now. I already know that these are going to be one of our special occasion muffins--for Thanksgiving, Christmas, and Easter.
