- 1/2 cup water

The key to this recipe is using self rising flour! This is the type of flour Chinese restaurants use to make the chicken pieces puffy! Self rising flour is located at all grocery stores for the same price as all purpose flour.

Instructions
Using a large frying pan, heat the vegetable oil on medium heat. Be careful not to heat it too high, if you do the batter will burn before the chicken cooks all the way through.
Place a 1/2 cup self-rising flour in a bowl and set aside.
Pour the remaining 1 cup flour, 1tbs sugar & 1/2 cup water into a large mixing bowl and mix well.

Use a paper towel to dry as much excess moisture from the chicken pieces as possible.
Roll each piece of chicken in the 1/2 cup of flour you set aside.
Then dunk each piece of chicken in the flour/water mixture.

Fry until golden brown for about 6 minutes, turning frequently for even cooking.
