Peanut Butter Cheesecake Brownie Bites are mini peanut butter cheesecakes with a brownie bottom and topped with cookie and brownie dough.
Peanut Butter Cheesecake Brownie Bites
Here’s how to make them.
- stand mixer OR hand mixer and large glass mixing bowl
- large mixing bowl
- cupcake pan
- cupcake liners
- measuring cups
- measuring spoons
- cooling rack
Brownie Bottom Ingredients
- ¼ cup unsalted butter
- ¼ cup chocolate chips
- ¼ cup sugar
- 1 large egg
- ½ tsp pure vanilla extract
- ⅓ cup flour
- ¼ tsp kosher salt
Peanut Butter Cheesecake Filling Ingredients
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- ½ cup peanut butter
- 1 tsp pure vanilla extract
- 2 packages of Ben and Jerry’s Half Baked Cookie Dough Bites
Preheat the oven to 350 degrees f.
Line a cupcake pan with cupcake liners.
Place the butter and chocolate into a medium sized microwave safe bowl.
Heat in 30 second increments until melted.
Mix until the two ingredients are combined and set aside to cool slightly.
Place the sugar, egg and vanilla into a large mixing bowl and combine.
Mix the sugar mixture into the chocolate mixture.
Mix in the flour and salt until combined.
Divide the mixture evenly amongst the cupcake liners.
Place the cream cheese and sugar into a large mixing bowl and beat until combined and smooth.
Beat in the eggs one at a time until combined.
Beat in the peanut butter and vanilla until combined and smooth.
Divide the cheesecake batter evenly between the cupcake liners.
Bake in the oven for 20-25 minutes or until the edges are slightly golden.
Remove from the oven, then place them onto a cooling rack and allow to cool completely.
Place into the fridge overnight.
Top with the Ben and Jerry’s half baked cookie dough bites before serving.
