
Sausage Tortellini Soup
Ingredients
- 1 lb ground sweet Italian sausage
- 4 chicken boullion cubes (I use really big soft ones from BJs, 1 of those is the equivalent of 2 regular boullion cubes. These boullion cubes call for 2 cups of water where a regular square boullion cube calls for 1 cup of water.)
- 8 cups water
- 28 oz can diced tomatoes seasoned with basil, garlic and oregano (This is important as this is where your seasonings come from.)
- 1x 12 oz bag tortellini
- 1 cup heavy cream
Instructions
Add the water and the boullion cubes to a pot and bring to a boil.
While waiting for water to boil, roll the sausage into tiny balls.
Fry the sausage balls until cooked, about 10 minutes.

Add the tortellini to the boiling water and bring to a boil.
Once tortellini comes to a boil, lower the heat and add the tomatoes (drained), cream and the sausage to the pot.
Heat over medium flame for about 10 minutes, stirring occasionally.
Serve.

We eat tortellini by itself...so now I need to try it in a soup. This really looks delic and something we might all like.
