Recently Holland House offered me the opportunity to try one of their cooking wines. I actually hadn’t cooked with cooking wines previously, so I accepted.

MY THOUGHTS
I received a sample of Holland House Marsala Cooking Wine, described as “Smooth, well rounded and sweet with hints of hazelnut”. After seeing their recipe for Chicken Marsala, I decided to adapt it and use the Marsala cooking wine with pork chops, coming up with valmg’s Pork Chops Marsala recipe. The resulting dish was very flavorful, and both RB and I thought it tasted very much like marsala dishes we’d had in restaurants. I plan on trying more of their products, as I have been expanding my recipe repertoire.
This is the Holland House Chicken Marsala recipe.

HOLLAND HOUSE VEAL OR CHICKEN MARSALA RECIPE
INGREDIENTS
- 4 boneless, skinless chicken breasts or veal cutlets
- 2 Tbsp. flour
- 4 Tbsp. butter, divided
- 2 cups mushrooms, sliced
- 3/4 cup HOLLAND HOUSE Marsala Cooking Wine
- 1/4 cup water (optional)
- 2 Tbsp. fresh parsley, chopped
- 1/4 tsp. rosemary (optional)
DIRECTIONS
Pound chicken (or veal) until thin. Dredge lightly on both sides with flour. In large skillet, melt 2 Tbsp. butter and sauté mushrooms over medium heat until browned, about 10 minutes. Remove mushrooms and set aside.
Melt remaining 2 Tbsp. butter in skillet. Add chicken and cook through, 4 minutes on each side. Remove to serving platter. Return mushrooms to pan, stir in cooking wine, water, parsley and rosemary. Heat and pour over chicken.

My husband won't ever use a cooking wine. Since I am not the good cook in the family (the only thing that I am best at is bread), I have asked about using cooking wines since I see them in the movies. He says that cooking wines just don't have the same flavor, more salty, than the real thing.
