This stew is great for busy weeknights during any season, and especially comforting during the chillier weather. This simple recipe is so easy to make that it just about makes itself. The hardest thing you will do when making this recipe is peel the potatoes. You don’t even have to measure seasonings to make this recipe, just open packets and pour them into the pot. This stew is not gluten-free due to some of the seasoning packets used to prepare it. This is a one-pot meal, all of the cooking is done in your electric pressure cooker. Here’s how to make it.

  • 3 cups potatoes, diced on the small side (I used 4 medium sized potatoes)
  • 16 oz bag frozen mixed vegetables
  • 3 cups beef broth
  • 2x packets brown gravy mix
  • 2 packets Zesty Italian dressing mix
  • 2 packets ranch dressing mix

Plug in the electric pressure cooker.

Select the saute setting on the pressure cooker and brown the ground beef.

You’ll want to use a meat mixer (some call it a meat turner) to move the ground beef around while you are browning it. You could use a silicone spoon but if you do you will likely find that it’s a little difficult to get under the meat in order to turn it over while browning it.

While the beef is cooking, peel and dice the potatoes.

Once the ground beef has finished browning, place the diced potatoes on top of the beef.
