  • electric pressure cooker (I used a 6qt Mealthy Multipot)
  • knife
  • cutting board
  • measuring cups
  • measuring spoons
  • silicone cooking spoon

Ingredients

  • 1.25 lbs sweet Italian sausage links
  • 1 small onion
  • 4 bell peppers (I used assorted colors)
  • 28 oz can diced tomatoes (undrained)
  • 1 cup uncooked white rice
  • 5 cups beef broth
  • 6 oz can tomato paste
  • 2 tsp chili powder (I used McCormick)

Instructions

Place a thin layer of olive oil into the bottom of the pot.

Set the pressure cooker to saute.

Place the sweet Italian sausage links into the pot and brown them.

When the sausage is about 75% of the way cooked, add in the onions.

Once the sausage has finished browning, remove it from the pot.

Cut the sausage into thin slices and return to the pot.

Add in the following items in this order – bell peppers, seasoning, rice, tomatoes, broth.

Put the lid onto the pot and close to seal.

Set the pressure cooker to cook on high pressure for 8 minutes.

Once the cooking cycle has finished, do a quick pressure release.

Serve immediately.
