My #Recipe How To Make A Stuffed Twice Baked #Potato In The Microwave

I wanted a baked potato but didn’t want to actually bake it. So I decided to make it in the microwave. It came out just as tender and soft inside and took a lot less time. The great thing is you can add your own toppings to this, because aside from the potato you’re really only heating things. Here’s how I made mine.

INGREDIENTS

  • 1 large potato
  • 1/4 cup sour cream (or I used premade onion dip)
  • 1 tbsp shredded bacon
  • 1-2 tbsp shredded cheese
  • 1 tbsp butter or margarine (I used Country Crock)
  • salt
  • olive oil

INSTRUCTIONS

Wash potato.

Rub potato with olive oil. I don’t know exactly how much I used, but it wasn’t much, just enough to cover the entire potato.

Sprinkle salt over skin of entire potato. Again, I can’t say how much but I just quickly waved the shaker over both sides of the potato.

Pierce potato with fork – twice lengthwise and one vertically. This is important because this is also where you’ll open the potato to stuff it.

Wrap the potato in a paper towel.

Microwave potato for 5 minutes. (I have a high powered microwave.)

Remove potato from the microwave and let sit for 1 minute.

Cut potato in half, using the marks from where you pierced the potato as a guide.

Scoop out the cooked potato, trying not to rip the remaining potato skin. Place the potato insides in a bowl and mash with a fork.

Add in the rest of the ingredients and mix well.

Stuff mixture back into the empty potato skin.

Microwave for one minute.

Serve immediately.

First off, I love a potato. Yum! You can make a potato in so many ways, definitely one of the more versatile vegetables, and add so many things to it... like the twice baked potato.

Delish! I really could use one of those now. Thanks for this simple & easy recipe. My microwave is old so I probably will have to go longer than 5 mins but I will start there & inch up if needed.
