
Meatball Rice Soup
- 3x 14.5 oz cans beef broth
- 3x 124.5 ox cans water
- 4 cups rice (I used 2x bags of Success white rice for this)
- 1x 12 oz bag frozen steamable mixed vegetables
- 1 lb ground beef
- 1x 28 oz can crushed tomatoes
- 1x packet onion soup mix
- 1/2 tsp parsley
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
Add beef broth and water to a large pot and bring to a boil.
While the water comes to a boil place the ground beef, parsley, onion powder and garlic powder in a large bowl. Mix well and roll the ground beef mixture into small meatballs.

Add the 2 bags of Success rice to the pot and cook for 5 minutes.
Partially cook the vegetables. I microwaved them for 3 minutes.
Remove the bags of rice from the pot but leave the broth in there.
Add the meatballs, tomatoes and onion soup to the pot and cook for 8 minutes, stirring occasionally.
Add the rice and vegetables and cook for 5 minutes, stirring occasionally.

Serve immediately.

What a hearty winter soup. It sounds like it would freeze well too. I'll have to make this when school starts back up.

Looks good but wouold substitute small pasta lilke ditalline for the rice.
