My Mom has always liked to try new dishes when she travels and she got key lime pie. She really enjoyed the puckery flavor. - 2 cups flour
- 1/2 cup powder sugar
- 1 cup unsalted sweet cream butter, softened
- 1/2 tsp salt
- 4 eggs
- 2 cups sugar
- 2 tsp Key Lime zest
- 1/2 tsp baking powder
- 1/3 cup lime juice
- 1/4 cup flour
Preheat the oven to 350 degrees f.
Spray the baking dish with nonstick cooking spray.
Place 2 cups of flour, 1/2 cup powder sugar and salt into a large mixing bowl and combine.
Using a pastry cutter or fork, cut in the butter until the crust mixture looks like crumbs.
Pour the crust into the pan and pat evenly into the dish.
Bake the crust for 10 minutes.
Make the filling while the crust is baking.
Place the eggs, lime juice, 1/4 cup flour, 2 cups sugar, 2 tsp key lime zest, baking powder into a large mixing bowl and whisk together.
Whisk until fully incorporated.
Pour the mixture onto the crust, then return it to oven and bake for 25 minutes or until set.
Once the bars are cooled, sprinkle with powdered sugar and cut into squares.
Top with key lime slices and enjoy!
