Instant Pot Chicken Fried Rice is very simple to make and has an easy gluten-free option. This tasty dish reheats really well, making for great leftovers.
You already know from past posts how much we enjoy rice and how often I use it. As such, Instant Pot fried rice shouldn’t entirely surprise you. If you want the dish to be gluten-free then the hardest thing you need to do is read labels. Now truthfully, the rice is quite a bit moister, wetter and heavier than traditional fried rice. In some ways I like it better, because the rice is just swollen with flavor. Everyone enjoyed this Instant Pot fried rice and we’ll definitely be having it again. This dish reheats really well, which is one of the reasons I even packed it up for a school lunch one day. Here’s how I make Instant Pot Chicken Fried Rice.
Instant Pot Chicken Fried Rice

Instant Pot DUO60 6qt 7-in-1 Multi-Use Programmable Pressure Cooker
Ingredients
- 1 pound boneless chicken, diced
- 1.5 cups uncooked rice (check the label if you’re making gluten-free)
- 2 cups of chicken broth (check the label if you’re making gluten-free)
- 1 cup of frozen peas and carrots
- 1 small onion, peeled and diced
- 2 eggs
- 1/4 cup of olive oil
- 2 teaspoons of garlic powder
- 1/3 cup of soy sauce (check the label if you’re making gluten-free)
Instructions
Place the olive oil into the Instant Pot and select the saute button.
Place the diced chicken into the Instant Pot and brown it, stirring frequently.
When the chicken is cooked and has turned white, remove it and set aside on a plate.
Add the diced onion to the Instant Pot and saute that.
While the onion is cooking, push some of it aside so you can add the two eggs (making sure to break the yolk).
Keep stirring while the egg and onion cooks.
Once the egg has cooked, add the rice, chicken broth, soy sauce, garlic powder and vegetables and stir well.
Set the Instant Pot to cook on manual low pressure for 9 minutes.
Once the Instant Pot has finished cooking do a manual pressure release. If you prefer your rice to be very soft, let the Instant Pot sit for 5 minutes before releasing the pressure.
Remove the lid and stir well.
Serve and enjoy.
