I really wanted to surprise the hubby with a quiche the other night. But I had no crust. So I decided to make a frittata. I put in the exact same things I’d been going to put into the quiche – sausage, peppers and onions. It’s a super easy dish to make, and he totally loved it. I used a caldero for this recipe as it’s the only thing I have that’s the right size that can go from stove to oven. Here’s how I made it.
Gluten-free Sausage Peppers And Onion Frittata
INGREDIENTS
- 8 eggs
- 1 cup milk
- 1 lb sweet Italian sausage
- 1 small green pepper
- 1/2 cup onions
- 2-4 oz shredded cheddar
- salt and pepper to taste
INSTRUCTIONS
Preheat oven to 350 f.
Place the sausage into the caldero and cook until center is no longer pink. I always add a little water to the pan when frying sausage. You can cook the links whole and cut later or you can cut the sausage and cook that way.
While sausage is cooking chop the peppers and onions up.
Place the eggs in a bowl and whisk.
Pour the eggs into the caldero with the sausage. Add the shredded cheese and gently stir.
Add the peppers and onions and stir.
Put the caldero in the oven and bake for 25 minutes.

Serve immediately with salt and pepper to taste.
Do you have a favorite type of frittata?

My favorite is sausage, onion & bacon. With those three things you don't need anything else!

I've never had a frittata before!! But this looks amazing. I would like to have this for a breakfast at dinner kind of thing. Lots of amazing protein!

I've never made a frittata before but it looks similar to an overnight bake I make that the family loves. Thanks for sharing this hearty recipe!
