I love mashed potatoes. I make them in a bunch of different ways. I wanted to make a batch of super smooth and creamy potatoes and I had a container of plain yogurt in the fridge about to go bad so I tossed that in. I was really surprised at how smooth and creamy the potatoes came out! They were a tiny bit tangier than plain mashed potatoes but nothing over the top. These potatoes pair perfectly with brown gravy, amongst other things. Here’s how I make them.

- potato peeler
- knife

Ingredients
- 5 lbs potatoes
- 2 oz whole milk plain yogurt (not Greek)
- 1/4 cup butter
- 1 cup milk
- 1 cup water
- salt and pepper to taste
Instructions
Peel the potatoes and cut them up into small chunks. (The smaller you can go the better, it makes it easier to mash them.)
Set the Instant Pot to cook on manual high pressure for 10 minutes.
Let pressure naturally release for 10 minutes then do a quick pressure release.
Add in the yogurt and butter and mix thoroughly.
Set the Instant Pot to cook on manual low pressure for 5 minutes.
Turn off and serve immediately with salt and pepper to taste.
