Last week I had some preformed hamburger patties that needed to be cooked. But, noone really wanted a burger right then. It was chilly that day and I was in a soup mood. So, I decided to use the beef from the burgers as just beef and make a soup. I’d been in a drawer where I’d seen an old Chinese takeout menu, leaving me with beef and broccoli on the brain. Which is what inspired me to come up with this soup. It took about 20-25 minutes to make, and here’s how I made it.
- 10 oz frozen chopped broccoli
- 1 lb ground beef
- 2x 10 3/4 oz cans cream of potato soup
- 21 1/2 oz milk (it’s 2 soup cans of milk)
- 4 oz shredded cheddar cheese
Brown the ground beef.
Place the soup and milk in a large pot and cook the broccoli in that.
Drain the browned beef and add it to the soup.
Add the shredded cheese, cook on low until the cheese it melted.
Serve with salt and pepper to taste.
