After successfully using Libby’s vegetables to help make a Quick and Easy Chicken and Potato Casserole I decided to use some fruit cocktail in a dessert. I simply combined the fruit cocktail with some muffin mix. I used some Triple Berry Muffin Mix that I had in the cabinet because I figured the fruit cocktail would lend itself well to the fruity flavor of the muffins. Here’s how I made them.

BERRY FRUITY MUFFINS
This recipe will make 12 muffins.
INGREDIENTS
- 1x 15 oz can Libby’s Fruit Cocktail
- 2x 6.5 ox packets Betty Crocker Triple Berry Muffin Mix
INSTRUCTIONS
Preheat oven according to muffin packet instructions. (For me it was 375 f.)
Prepare muffin mix according to instructions.
Drain the fruit cocktail well.
Drain the fruit cocktail again.
Place muffin pan liners into pan or spray pan with nonstick cooking spray well.
Distribute muffin mix evenly amongst the muffins.

Bake according to instructions. (For me it was 16 minutes).
Remove from oven and cool.

Serve and enjoy.
The resulting muffins were colorful, really moist and quite tasty. I thought it was fun to bite into the muffins, and with any bite you might get a different piece of fruit.

I usually like blueberry muffins, but anytime I stop at Whole Foods I grab a pumpkin chocolate chip one!
