The holidays can be a really hectic time. For many people things just become more complicated. There are more errands to run, more cleaning to be done, you know what I mean. Sometimes the thought of putting together a decent meal can be overwhelming for some. After a long day consisting of your regular routine, shopping, wrapping, errands, post office, so on and so forth, the last thing some people want to do is start making something that involves a lot of work. For me, it’s peeling potatoes. Potatoes are a favorite but I don’t like peeling them and I get impatient waiting for them to cook. So what’s a girl to do? Get some help. Help can come in many forms, and in this case it’s called Libby’s.

Libby’s makes vegetables and fruits in a number of varieties including gourmet, organic and natural. Libby’s has lots of recipes available on their website, Facebook, Twitter and Pinterest. Rather then use one of their recipes, I thought it would be fun to see if I could come up with something yummy and quick that utilized two Libby’s products, sliced potatoes and peas. The result – Quick and Easy Chicken And Potato Casserole.

Quick and Easy Chicken And Potato Casserole

INGREDIENTS

  • 2x 15 oz cans Libby’s sliced potatoes
  • 1x 15 oz can peas
  • 1x 16 oz container sour cream
  • 2-4 oz shredded cheese
  • 10-12 oz cooked chicken breast
  • 1’4 cup shredded bacon
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • salt and pepper to taste

INSTRUCTIONS

Preheat the oven to 375 f.

Spray a large casserole pan with nonstick cooking spray.

Place the potatoes in a layer on the bottom of the pan.

In a large bowl, combine the chicken, sour cream, bacon, onion powder and garlic powder.

Place the mixture over the potatoes, using a spoon to distribute it to cover all of the potatoes.

Sprinkle the peas on top.

Sprinkle the shredded cheese on top of the peas.

Bake for 15 minutes.

Serve immediately, with salt and pepper to taste.

That’s it. The prep took no effort at all and the meal didn’t require hours of cooking. The dish tasted as good as any I’ve made myself, minus the work of prepping the potatoes. What a time saver! I was so pleased that I challenged myself to come up with a dessert as well. That too was no problem, I made Berry Fruity Muffins. Be sure to check them out too, they’re really good!
