
Leftover pancake mix. I hate to waste it. There’s no need to, you can use it to make something else. It makes a nice cookie, for example. Add a little maple syrup (which you would have put on top of the pancakes anyway) and some bacon and you have savory cookie. Here’s how I made them.
Bacon Maple Syrup Pancake Mix Cookies
This recipe makes 24 cookies.

Equipment Needed
- 2 cookie sheets lined with parchment paper. (Alternatively, you could use a silicone baking mat.)
- mixing bowl
- measuring cup
- wire cooling rack
- pot holders
- spatula
Ingredients
- 2 cups buttermilk pancake mix
- 1/2 cup maple syrup
- 1/2 cup butter, softened
- 1/2 cup shredded bacon
Instructions
Preheat oven to 350 f.
Line a baking sheet with parchment paper.
Place all ingredients except the bacon in a mixing bowl and combine thoroughly.
Add the bacon and mix well.
Form small balls with the mixture and place onto the cookie sheet.
Bake for 10-12 minutes, until edges are turning golden brown.
Set cookies on a cooling rack for 5 minutes before serving.

Bacon and pancakes are a delight to have for breakfast, but to have it in a cookie? WOW. This is insanely delicious! I am making a batch today and eat my fill. Of course, I will share it with my family, whatever is left is theirs. LOL.
