Bacon & Cheese Stuffed Tomatoes
Raise your hand if you love bacon! Raise your other hand if you love cheese! Bonus points if you like BLT sandwiches! Today I have a quick and easy recipe sure to make you smile. It’s the best of a BLT turned into a little meal of its own – Bacon & Cheese Stuffed Tomatoes. This quick and yummy dish is just like a BLT sandwich except it has no lettuce and no bread. It takes only minutes to make, making it ideal for a quick meal. While the tomatoes are not baked, you do need to turn on the stove for like 3 minutes in order to heat up the bacon and melt the cheese. Be careful when you’re scooping the bacon mixture out of the pan, you may find you enjoy the warm bacon and cheese combination so much you have to make more to stuff the tomatoes. - small mixing bowl
- small pan
- measuring cups

Ingredients
- 2 medium tomatoes
- 1/2 cup crumbled bacon (I used Hormel)
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayo
Instructions
Use the knife to cut the top off of the tomato.
Hollow out the inside of the tomato, taking care not to puncture or break through the sides or bottom.
Rinse out the tomato and place it upside down on a paper towel to drain.
Place the bacon, cheese and mayo into the mixing bowl and combine.
Place the bacon mixture into the pan and warm it until the combination is warm and the cheese has melted.
In a frying pan heat up the bacon add cheese until melted.
Scoop the bacon mixture into the tomatoes.
Serve immediately.
