Peppersteak Stuffed Tomatoes Recipe From Val's Kitchen

I love tomatoes. In, on, under and with food, tomatoes are definitely one of my favorite fresh produce. Stuffed tomatoes can be a lot of fun. This past week I had some delicious thin sliced steak that I knew would be perfect with some fresh tomatoes. But I wanted to change things up a bit. So, I made some peppersteak and stuffed the tomatoes with it. The flavor melding the tomatoes and the cheesesteak together was so good! And, everything I used was gluten-free so it was safe for my youngest. Here’s how I made it.

Peppersteak Stuffed Tomatoes

Ingredients

  • 1x 12 oz package ButcherBox thin sliced steak
  • 1 small onion
  • 1 green pepper
  • 4 large tomatoes (I used hothouse tomatoes)
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 4 slices mozzarella cheese (shredded mozzarella cheese would also work instead)
  • salt and pepper to taste

Instructions

Preheat the oven to 350 f.

Place the butter into a large skillet.

Place the steak, pepper and onions in with the butter and stir. Sprinkle the garlic powder on the mixture and brown the mixture.

While the meat mixture is cooking, hollow out the tomatoes.

Rinse their insides and turn over to drain any excess water.

Fill the tomatoes.

Fold the cheese into a small square sized to fit inside the opening of the tomato.

Place the stuffed tomatoes into the oven and bake for 15 minutes.

Serve immediately with salt and pepper to taste.

Very nice recipe!! I will make it with either soy granules or with Paneer (Fresh cheese) instead of steak because I am a vegetarian.
