This post brought to you by Sam’s Club. All opinions are 100% mine.

I love coming up with new meals for my family. It shakes things up so we’re not eating the same things time and time again. We did that for a number of years and it gets BORING! I try to continually add new things into the rotation all the time. Recently I was challenged to Celebrate Spring by trying one of the recipes from the Sam’s Club casserole site. That’s right! Sam’s Club has a casserole site, containing some recipes for some really yummy looking dishes. All of the recipes look fairly easy to make. And best of all, they call for affordable ingredients that most of us have in our kitchen cabinet, such as Del Monte® Whole Kernel Corn or Cut Green Beans available at Sam’s Club.

I was up for the challenge of cooking something new this weekend and decided to look to the Sam’s Club casserole site for inspiration. I wound up choosing their Cheddar Corn Casserole to adapt and make my own. Aside from the corn, I chose ingredients that needed little or no prep work other then cutting. The resulting dish was really easy to make and very, very tasty, and we will be having it again. Here’s how I made it.

Oh. My. GAWD. I want that right now! Dinners like that always go over big in our house. Especially if they contain bacon!

I haven’t had a casserole for awhile. My husband’s fave though is ham, peas, and swiss in a casserole.

I have never seen a dish like this before. Sounds yummy to me, but not sure my family would like it. Maybe I can make a small dish.

On dish meals are great for working moms and on the go families. My favorite casserole uses left over smoked ham cut in pieces, frozen green beans (canned turn mushy), German spaetzel, butter with grated cheese optional.

That looks like a yummy casserole. Too bad I don’t eat pork, I guess I could substitute it with turkey bacon. Pinning! Thanks!

I’d probably eat this if it was just bacon and cheese, but the extra stuff is an added bonus!!!
