Instant Pot Mozzarella Stuffed Meatballs

Meatballs are great because they’re easy to make and tasty. There’s a lot of different ways to serve them. While I do love a regular meatball, I really love cheese stuffed  inside my meatballs. (This should not be a surprise if you read this site regularly, if you do then you know how much I love cheese.) The cheese complements the beef, and the melty cheese provides moisture along with flavor. Mozzarella Stuffed Meatballs are great with pasta or on a sub roll. Using the Instant Pot has become my favorite way to make meatballs because it’s quick and easy and I can do all of the work in one pot right in the pressure cooker. Here’s how I make Instant Pot Mozzarella Stuffed Meatballs.

Equipment Needed

Ingredients

  • 1.75 lbs ground beef
  • 1/2 cup Italian bread crumbs
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp parsley
  • 1 egg
  • 28 oz can diced tomatoes (the variety that is seasoned with basil, garlic and oregano)
  • 28 oz can tomato puree
  • 4 sticks string cheese

Instructions

Place the ground beef, bread crumbs, onion powder, garlic powder, parsley and egg into a large mixing bowl and combine thoroughly.

Pour the tomato puree into the bottom of the Instant Pot.

Cut each piece of string cheese into 3 pieces. (I made 12 large meatballs. If you’re doing smaller meatballs be sure to cut the cheese into smaller pieces.)

Take enough meat to make a decent sized large meatball, but leave the meat open and flat.

Place the cheese in the center of the meat.

Form a meatball around the cheese, pinching and rolling it until it’s closed.

Place the meatballs into the sauce.

Pour the diced tomatoes into the Instant Pot.

Set the Instant Pot to cook on high pressure for 6 minutes.

When the Instant Pot is finished cooking, let sit for about 5 minutes then do a quick pressure release.

Serve immediately on sub rolls or over your favorite pasta.

I hate the use of the word retarded as well. I am a middle school teacher and have a first day of school activity about this and the kids always have a come to Jesus moment after they realize how offensive it is when they say an inanimate object is retarded or use it to make fun of someone. Love your recipes.

These look so delicious and filling! It would be so easy to make these ahead of time and then have meatballs ready to go on a sandwich. The kids would love these after a big swim meet!

Yum! I've been all about my Instant Pot for lunches. Normally I'd do something super simple because time is short, but with an Instant Pot I can be a little more flexible. Your meatballs sound awesome
