I love coming up with new meals for my family. It shakes things up so we’re not eating the same things time and time again. We did that for a number of years and it gets BORING! I try to continually add new things into the rotation all the time. Recently I was challenged to Celebrate Spring by trying one of the recipes from the Sam’s Club casserole site. That’s right! Sam’s Club has a casserole site, containing some recipes for some really yummy looking dishes. All of the recipes look fairly easy to make. And best of all, they call for affordable ingredients that most of us have in our kitchen cabinet, such as Del Monte® Whole Kernel Corn or Cut Green Beans available at Sam’s Club.
I was up for the challenge of cooking something new this weekend and decided to look to the Sam’s Club casserole site for inspiration. I wound up choosing their Cheddar Corn Casserole to adapt and make my own. Aside from the corn, I chose ingredients that needed little or no prep work other then cutting. The resulting dish was really easy to make and very, very tasty, and we will be having it again. Here’s how I made it.
Bacon Cheddar Chicken Corn Bake
INGREDIENTS
- 3 cups shredded cheddar cheese (about 12 oz)
- 2 tbsp all-purpose flour
- 1/2 tsp black pepper
- 3/4 cup milk
- 4 oz. cream cheese, softened
- 4x 15.25 oz cans Del Monte® Whole Kernel Corn, well drained
- 6 strips bacon, cooked and chopped
- 6 oz cooked chicken (such as Butterball Everyday or Perdue Shortcuts)
- 1 packet ranch dressing mix
- 2/3 cup sliced green onions (optional)
INSTRUCTIONS
Preheat oven to 350°F.
Spray a 9×13 baking dish with nonstick cooking spray.
Place the drained corn into the dish.
Place the cheese into the dish and stir well.

Add the milk, pepper and flour into the dish and stir well.

Add the bacon to the dish and stir.

Add the chicken to the dish and stir.
If you want to add the green onions, add 1/3 of a cup now and stir.

In a bowl, combine the softened cream cheese with the ranch dressing mix and stir well.
Add the cream cheese mixture to the dish and stir well until everything is well mixed.

Cover with foil and bake 30 minutes.

Uncover. If you had decided to add the green onions, sprinkle the remaining 1/2 cup across the top of the dish. Bake for an additional 5 minutes.

Remove from oven and let sit for about 5 minutes before serving.

Personally, I hate corn in meals but my entire family loves it! I'm positive my husband would like this - and it's perfect for a night I want to eat something different. lol
