Some of these flours include quinoa, teff, rice, buckwheat, millet and cornmeal. All of these flours and more are used in these creative and, most importantly, delicious recipes. The results are outstanding, and wheat flour will never be missed!

Flavor and nutrition is a primary focus in all the recipes. And after extensive feedback from celiacs and the general public, the authors have included an egg-free chapter, as well as many nut-free and rice-free recipes. Ease of baking is also important, so there’s a whole chapter devoted to nutritious mixes that can be prepared ahead of time. And, as always, there’s a wealth of helpful hints and techniques for baking the perfect gluten-free loaf.

Donna Washburn, P.H.Ec and Heather Butt, P.H.Ec, both professional home economists with honors food science degrees, are acknowledged experts in the field of gluten-free recipe development and bread machine baking. They have written nine cookbooks, including 300 Best Cnadian Bread Machine Recipes. They both reside in Ontario.

MY THOUGHTS

Bread is one of the things my youngest loves the most. There are a few gluten-free breads out in stores but only a couple of ordinary things, as opposed to bread with gluten that you find in hundreds of different varieties.That’s why I’m always looking for gluten-free recipes, or better still cookbooks with nothing but.

  • Egg-Free Breads
  • Flatbreads, Filled Breads, Pizzas And Snacks

The beginning of the book has some great sections on the art of gluten-free baking itself. Topics covered include successful use of a bread machine for making gluten-free breads, grains and ingredients, and commonly used terminology.  Each chapter has its own index, which I find invaluable, it makes things so much easier to find. The recipes themselves are very detailed but easy to read and follow along. You will find that recipes call for some specific ingredients that you might not have at home, you’ll have to get those online or from either a local natural foods store, perhaps a grocery store with a very well stocked gluten-free section. Nutritional values are included for each recipe. Missing is cooking and prep time. I know that baking breads aren’t a quick thing but I still like to know how much time something is going to take before I make it. There are some great photos in the middle of the book (approximately 16), but I do wish there were more photos. There are 150 recipes included in the book. Some of the ones I’m most looking forward to trying include Twice-Baked Potato Bread, Herb Bread, Bacon Cheddar Mini Loaves, Maple Oat Loaf, Banana Raisin Bread, Pumpkin Pie Bread, Bacon Cheddar Cornbread, Nut-Free Creamy Bread Mix, Panini Sandwich Loaf, and Golden Panini Buns. This cookbook would be great for anyone who cooks that is gluten-free or has a loved one that is gluten-free.
