You’ve probably noticed by now that I like products that save me time and energy. There are times when I like to cook from scratch, but then again there are times where there simply aren’t enough hours in the day and I look for ways to save time where I can. Take cake mix, for example. It’s great for a lot of other things besides cake. Here’s a simple recipe calling for only 4 ingredients that turns cake mix into soft and chewy crinkle cookies. These cookies would be great for a Valentine’s Day gathering. Here’s how I make them.
Red Velvet Cake Mix Crinkle Cookies
The recipe makes 18-24 cookies, depending on how large you make the cookies. My batch made 18 nice sized cookies.
Equipment Needed

- 2 cookie sheets lined with parchment paper. Alternatively, you could use a silicone baking mat.
- ice cream scoop or cookie scoop
- wire cooling rack
- spatula
- mixing bowl
- pot holders
Ingredients
- 16.5 oz box of red velvet cake mix (I used Duncan Hines)
- 2 eggs
- 1/3 cup oil (I used vegetable)
- 1/4 cup of powdered sugar
Instructions
Preheat the oven to 350 f.
Place cake mix, eggs and oil in a mixing bowl and combine thoroughly.
Line the cookie sheets with parchment paper.
Place the powered sugar into a smaller bowl.
Form balls with the dough. (I sometimes use a cookie dough scoop or an ice cream scoop, or if I can’t get that quickly I have also used a plastic medicine cup.)
Place each ball into the powdered sugar and rotate to coat completely.
Place the balls onto the cookie sheet.
Bake for 10-11 minutes.
Let sit on the cooling rack for a few minutes before serving.

I’m such a fan of red velvet! I had no idea I could transform a boxed cake mix into such beautiful cookies. I’ve made red velvet crinkle cookies before, but the process was much more labour intensive. This way is much easier. 🙂

This is so simple to make and love the gorgeous color of the cookies. With two young boys in the house, I would love to save some time making cookies like this. This would be great for the V-day party in my munchkins school this week.
