I wanted to make some homemade chicken. But, I wanted to make something just a little different. This is what I came up with.
INGREDIENTS
- 1 sleeve Club crackers
- 2 lbs boneless chicken breast
- 2 eggs
- 2 tbsp milk
- 4 oz shredded cheddar cheese
- 4 tbsp Grill Mates Molasses Bacon seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup crumbled bacon
INSTRUCTIONS
Preheat oven to 400.
Slice the chicken breasts into tenders.

Place the crackers in a baggie and crush them up with a meat tenderizer.
Pour the crushed crackers into a decent sized bowl. Add in the shredded cheddar cheese, onion powder, garlic powder, Grill Mates Molasses Bacon seasoning and the bacon.

Break the eggs and put them into a different bowl for wetting the chicken.

Add the milk to that bowl.
Wet each piece of chicken in the egg/milk mixture, then dredge the chicken in the cracker/spice/bacon/cheese mix in the other bowl.
Place each piece of chicken onto the baking sheet.

Cover.
Bake for 25 minutes for thin, 30-35 for thicker.
Remove from oven and serve.

This is crispy and delicious. The chicken has a slightly sweet flavor that blends well with the bacon and cheese. This goes really well with mac and cheese. It also goes really well with mashed potatoes.

I have used French's onions as a coating for my pork and chicken. I have also made my own shake and bake from corn flakes as well as crackers--so I bet adding cheese and/or bacon in would taste yummy.
