I wanted to make something quick, simple and tasty. Since my oldest son mentioned being in the mood for tater tots, I thought I’d incorporate them into a casserole. I didn’t have anything defrosted so I found myself in a good position to concoct. I had a package of Perdue Short Cuts. I had a container of frozen cream cheese I promised my son I wouldn’t put on his bagels. (He didn’t like the way it defrosted after being frozen during Hurricane Sandy.) I had an open container of sour cream. I had frozen veggies. Here’s what I came up with – valmg’s Cheesy Chicken Broccoli Tater Tot Casserole.
INGREDIENTS
- 16 ounces frozen tater tots
- 10-12 oz frozen broccoli florets
- 9 oz Perdue ShortCuts Italian Style (any cooked chicken breast will work)
- 16 oz cream cheese, softened
- 8 oz sour cream
- 4 oz shredded cheddar cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
DIRECTIONS
Preheat oven to 350F.
Spray glass baking dish with non-stick coking spray.
Microwave frozen broccoli for 3 minutes.
While broccoli is in the microwave, chop chicken into chunks.
Mix all the ingredients together in a 9×12 glass baking dish.
Bake for 30 minutes, or until top is browning.
Remove dish from oven and let sit for 5 minutes.
Serve, with salt and pepper to taste.
