I make a pretty mean meatloaf, if I do say so myself. I actually have several variations on one meatloaf that I make, depending on what I’m in the mood for. I’ve always made my meatloaf with beef. I got a request asking for a turkey meatloaf not long ago. I found one today that was being offered to Delicious Bytes bloggers and thought it would be perfect to share, especially since it’s creators, The Neely, were a big part of the Huddle to Fight Hunger program. Since September, Kraft Foods has teamed up with celebrity chefs Gina and Pat Neely, sportscaster Erin Andrews, and football legend Joe Montana to help fight hunger in America through the Huddle to Fight Hunger program. The program has successfully donated over 20 million meals to Feeding America, the nation’s leading hunger relief organization. The program culminated today at the first-ever Kraft Fight Hunger Bowl college football game, having more than 20 million meals donated.

The Neelys Cheesy Turkey Meatloaf

Prep Time: 20 min. | Total Time: 1 hour 20 min. | Makes: 8 servings.

What You Need

  • 1 red pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1/4 tsp. ground black pepper
  • 1 egg, beaten
  • 3/4 cup ketchup, divided
  • 3 Tbsp. soy sauce
  • 1/4 tsp. Worcestershire sauce
  • 2 lb. ground turkey breast
  • 36 RITZ Crackers, crushed (about 1-1/2 cups)
  • 1 cup KRAFT Mexican Style Finely Shredded Four Cheese, divided

Make It

Heat oven to 350ºF.

Cook and stir red peppers, onions and garlic in hot oil in large skillet on medium heat 5 min. or until crisp-tender. Stir in black pepper; cool.

Mix egg, 1/2 cup ketchup, soy sauce and Worcestershire sauce in large bowl. Stir in vegetable mixture. Add turkey, cracker crumbs and 3/4 cup cheese; mix well. Shape into 10×5-inch loaf in shallow pan; top with remaining ketchup.

Bake 55 min. to 1 hour or until done (160ºF), topping with remaining cheese after 50 min.

Substitute:
Prepare using lite soy sauce.

Serve with a cold glass of prepared CRYSTAL LIGHT Lemonade Flavor Drink.

Nutrition Information Per Serving: 300 calories, 12g total fat, 4g saturated fat, 95mg cholesterol, 940mg sodium, 18g carbohydrate, less than 1g dietary fiber, 5g sugars, 32g protein.

I like meat not fowl grouond beef any way--it's the taste.
