Well Southern Living has done it again. I expect a great cookbook from them and they deliver. This one made me smile right up front. The index of each chapter has thumbnails of the recipes in it. How cool is that! The chapters are color coded to help make it easier for you to find exactly what you’re looking for. After all, you’re looking for a superfast meal so chances may be that time is an issue and don’t want to spend hours thumbing through a cookbook looking for a recipe.

Speaking of the recipes. There are over 120 of them. Every single one has a gorgeous full-page color photo. Every recipe takes 20 minutes or less. The recipes are all easy to understand, with total time clearly marked along with time-saving prep and shopping tips. The cookbook also contains Top 10 Superfast Secrets, which are tips that explain how you can cut down your time in the kitchen.

There are a lot of recipes in here that I’m looking forward to trying including tomato Basil Bisque, Beefy Minestrone Soup, Country Ham And Peach Panini, Chicken Fried Steak, Turkey Tetrazzini, Skillet Shepherd’s Pie, Grilled Basil And Garlic Pork Chops, Cheddar Drop Biscuits, Brown Sugar Pears, Biscuit Beignets and many more. My fast go-to meal is chicken and sausage Cajun pasta. It fakes about 30 minutes to prepare.

I like to make clean out the fridge omelets.(10min max) I take out leftover meats, veggies, cheeses etc and let the kids pick what they want in their own unique omelets. We have had some cool combos like my sons chili cheese omelet and my daughters broccoli chicken cheddar omelet. My fav is a cheesy green pepper and salsa omelet...yum!

Shredded meat (beef, chicken or pork!) tacos (or burritos) - 10 minutes. I am able to make these quicker by cooking, shredding and freezing beef and/or pork roasts and chicken ahead of time. Then it only needs to be thawed and heated while I chop veggies! :)
