I remember seeing pralines the first time my parents took us to Louisiana. My Mom and Dad just loved them. Over the years I’ve seen them here and there, and have also seen them available to purchase as gifts for people. If you or one of your family or friends loves pralines, you can make them right at home yourself. This recipe for Southern Pecan Pralines is fairly simple, but does require particular attention when it comes to the timing of the stirring. Here’s instructions on how to make them.

Equipment Needed
- cupcake tin
- cupcake paper liners
- large heavy bottomed saucepan
- candy thermometer
- small cookie scoop
- measuring cup
- measuring spoons
- cooling rack
Ingredients
- 1 1/2 cups pecans (halved or chopped)
- 1 1/2 cups sugar
- 3/4 cup brown sugar
- 6 tbsp unsalted butter (cubed)
- 1/2 cup evaporated milk
- 1 tsp vanilla
- 1/2 tsp salt
Instructions
Line the cupcake tin with paper liners and set aside.
Place the pecan halves, sugar, brown sugar, butter, milk, vanilla, and salt into the saucepan.
Stir to combine all ingredients.
Set the saucepan on medium heat and bring it to a boil.
Put the candy thermometer into the saucepan and stir constantly until the temperature reaches 235-240 degrees (or about 10 minutes).
Set the pan aside.
Immediately beat the mixture with a wooden spoon for 2-5 minutes, until the mixture thickens and has a cloudy appearance.
While the mixture is still hot, use the cookie scoop to measure out portions of the candy.
Transfer the filled scoop of candy to the lined cupcake tin, making sure to cover the bottom of each tin.
Set aside to cool completely.
Once the candy has reached room temperature and is firm and solid it is ready to serve.
Remove the cupcake liner before serving.
